{Banana Blueberry Oatmeal Muffins}

Ingredients:

1/2 C. Coconut Oil

1/4 C. Honey

2 Ripe Bananas, Mashed

Dash Of Cinnamon

2 Eggs

1 t. Vanilla

1/2 C. Honey Vanilla Greek Yogurt

1 (10 Oz.) Bag Frozen Blueberries {Thaw}

1 1/2 C. Wheat Flour

1 C. Oats

1 t. Baking Soda

1 t. Baking Powder

1/2 t. Salt

Sprinkle Turbinado Sugar

Directions:

Put your oil, honey, bananas, cinnamon, eggs, vanilla and yogurt in your stand mixer and mix well, starting on low, then increase to high to really incorporate everything well.

In a separate bowl; add your flour, oats, baking soda, baking powder and salt. Whisk together.

Add your dry ingredients to the stand mixer. Using your paddle attachment, mix on low until JUST barely mixed together. Do not over mix.

Stir in your blueberries

Line a muffin tin with papers liners. Use a 1/4 measuring cup scoop and fill each muffin liner to the top. You will have more batter after filling the 12 muffins. You can use another muffin tin at the same time or wait and use the same one. I just poured the extra batter into a little baking dish - this will take longer to bake.

Bake @ 375 for 20-25 minutes, or until toothpick comes out clean. ENJOY! :)
